Waterman Bistro opened in June 2022 by Niall McKenna, and offers a no frills dining experience in Belfast’s buzzing Cathedral Quarter. The bistro is headed up by Aaron McNeice and offers a local, seasonal menu with influences and flavours from Europe. The food menu offers “house” made pasta, cured pork and Northern Ireland staples of bread and butter. The menu is paired to a short wine list, with a reserve bin end list for the discerning wine drinker, alongside a monthly changing local gin and beer selection.
Although the influence of the menu has roots in Europe, the daily ingredient list is local, supporting artisan producers and farmers. Head Chef Aaron has been working alongside Niall since 2014 and trained as the company's first apprentice and inspired the company wide apprenticeship program. Aaron has a young dynamic team and is joined in the front of house by manager Conor McHugh and Sean White, alongside Mark on the bar, Sheridan, Phillippa, Jay and Lucy.
The restaurant was awarded a Bib Gourmand from Michelin, as it offers an exceptional no choice set menu.
