Ciaran runs a micro bakery that started from his tenement kitchen in Glasgow, he’s self taught and is very much a home baker but now a pro too.  This background gives Ciarán the perfect toolkit to teach perspective home bakers, showing them the pitfalls to avoid and the hard-won ‘shortcuts’ he has amassed over the last few years.

Join us at Waterman House Cookery School for an evening of sourdough bread making. At this class expert baker Ciaran from Hundredth Monkey Bakery will guide you through the tips and techniques to make great tasting sourdough bread in your own home.

At our cookery school we pride ourselves on not only providing top-notch educational classes for upskilling and acquiring new skills but also cultivating the perfect setting for a fun and interactive learning experience.

At this class we will make...

  •  Sourdough Bread

  • Sourdough bagels

  • Sourdough Ciabatta

Ciaran’s class will look at sourdough through the lens of three different breads; bagels, a country loaf and ciabatta.  You’ll get to work with a stiff, a wet and a high hydration dough respectively, which will not only aid you in being able to bake a variety of breads, but also set parameters for you to help flag any issues or variations when you are making your bread at home, helping you fix things in real time.  You’ll also learn skills like bassinage, stretch & fold, dough shaping and scoring as well as how to plan a schedule around your lifestyle, maximising the downtime to make the joy of baking as every day as you want it to be.  

The class will use stand mixers but the theory will translate to hand mixing.  Ciarán will cover the differences and limitations at each stage.
