We are excited to announce a special cheese making class with Davide Tani from Velocheese.

"Originally from Sardinia, Davide Tani studied cheesemaking under a master cheesemaker in Puglia, the home of cows’ milk Mozzarella (Fior di Latte), with the aim of bringing a taste of his homeland to Northern Ireland.

Through his cheese making business, Velocheese, he handcrafts a range of Italian style fresh cheeses. These include Mozzarella and an award winning Stracciatella (Bronze winner at the 2022 World Cheese Awards).

He was thrilled to be named the UK New Cheesemaker of the year 2023 (Virtual Cheese Awards) and be the recipient of the 2023 Dougal Campbell Bursary Award for new cheesemakers (Specialist Cheesmaker Association). 


This cheese making class will explore the theory and practicalities of cheese making. You will have the opportunity to craft:

  • Primo sale (a fresh cheese) and
  • Hand stretched mozzarella.

The class will last approximately 3 hours and will finish with a final tasting of the delicious cheeses you have made, served with accompaniments and a glass of wine.
